Ingredients:
Servings: 2
Raw mango: 1/4 cup
Cilantro: 2 springs
Cumin: 1 tsp
Ginger: 1/2 in
Red chilly: 1/2
Salt: to taste
Yogurt: 1/2 cup
Water: 2 cups
Method:
1. Mix yogurt and water into smooth buttermilk like consistency. Keep it aside.
2. In a mortar and pestle make a smooth paste of cut raw mango, cilantro, ginger, cumin amd red chilly.
3. Combine both and serve cold.

Carrot milk
Ingredients:
Carrots: 4-6 (small ones)
Milk: 4.5 cups
Cashew: 6
Almonds: 6
Sugar: 3/8 cup (adjust accordingly)
Cardomom powder: 1/2 tsp
Almond powder: 2-3 tbsp
Method:
1. Cut carrots into small pieces. Pressure cook along with cashews and almonds in 1 cup of water for 5-6 whistles.
2. Once cooled, blend ingredients to a smooth paste with enough water.
3. In a heavy bottomed pan, heat milk on a low flame until it thickens a bit and add the puree along with sugar and almond powder.
4. Once it comes to a boil and desired consistency, add cardomom powder.
5. Let it cool and then refrigerate for atleast 4 hr. Serve chilled.

Thandai
Ingredients:
Thandai masala:
Almonds-35
Green cardamom pods-20
Whole peppercorn-20
Fennel seeds-4 tsp
Pumpkin seeds-2 tbsp
Poppy seeds-4 tsp
Thandai:
Milk-4 cups
Sugar-1/2 cup
Saffron-8 strands
Method:
1. Soak almonds overnight or in hot water for 20 min. Peel off the skin and keep them aside.
2. Make thandai masala by blending all the ingredients listed under thandai masala. You can add some milk to make into coarse paste.
3. Boil milk in a thick bottomed pan on a medium flame by stirring frequently. Keep few tablespoons of milk aside and add crushed saffron strands.
4. Once milk comes to a boil, add thandai masala and mix well with a whisk.
5. Add sugar and mix until it is dissolved. Turn off the heat.
6. Add saffron milk and allow it to rest for 1 hr for the milk to absorb all flavors.
7. Sieve the mixture in a double layered cheesecloth and refrigerate for 6 hr or overnight.
8. Serve chilled with more nuts if u like and enjoy!

Hot chocolate
Ingredients:

Instant espresso-1 tsp
Semi-sweet chocolate chips-1/4 cup
Cinnamon-pinch
Method:
1. Combine all the above ingredients and blend them at high speed in vitamix (big jar) for 4 min. Make sure to loosen the small cap for steam to escape. Enjoy!

Spicy beetroot lassi
Ingredients:
Beetroot-1 small
Yogurt-1/2 cup
Water-1/4 cup
Salt-to taste
Mint leaves-10
Pepper-to taste
Cumin powder-1/2 tsp
Sumac-1/2 tsp
Sugar-1 tsp
Lime juice-1 tsp
Garam masala-pinch
Method:
1. Peel beetroot and cut into small pieces.
2. Boil in a pressure cooker or an open vessel till soft.
3. Blend beetroot with yogurt and remaining ingredients listed above.
4. Adjust for taste and serve chill with ice cubes.

Cucumber coconut water
Ingredients:
Cucumber-1 large
Coconut water-1.5 cups
Mint leaves-4
Salt-pinch
Jal jeera-1/2 tsp
Cumin powder-1/2 tsp
Sugar-1 tsp
Lemon-1/2
Method:
1. Peel cucumber and cut into pieces.
2. Blend cucumber and all the other listed ingredients.
3. Adjust all the spices according to your taste.
4. If you dont want the fiber from cucumber, strain the mix using a fine mesh strainer.
5. Enjoy this super healthy drink especially in summer.

Sweet beetroot lassi
Ingredients:
Beetroot-1 small
Milk-1/4 cup
Yogurt-1/4 2
Dates-3
Cashews-5
Method:
1. Pre heat oven to 450F.
2. Peel beetroot and each properly. Dry it and wrap it in a foil. Close the foil by twisting.
3. Bake for 40 min. Turn off they oven and let it sit inside for an hour. You can also leave in there overnight of you like.
4. Alternatively, just boil it and use it.
5. Cut the neurotransmitters into small pieces.
6. Blend with yogurt, milk, cashews and dates. Use date syrup if you can to distribute the sweetness evenly.
7. Serve with ice cubes and enjoy!

Mango Frooti
Ingredients:
Sliced Raw green mango-2 cups
Sliced ripe mango-4 cups
Water-4 cups
Sugar-3/4 cup
Method:
1. Blend green mango, ripe mango along with 1 cup of water and sugar.
2. In a pan, add blended mango along with 3 cups of water.
3. Add more water and sugar and adjust for consistency and sweetness.
4. Bring the mix to boil and continue to boil for 10 more minutes. Check for taste and consistency again.
5. Turn off the stove and let it cool to room temperature.
6. Sieve the mix to remove pulp. If you like it with pulp, you can skip this step.
7. Refrigerate it and serve cold.
8. This tastes exact like store brought mango frooti. Enjoy this deliciousness!!

Gajar ka doodh
Ingredients:
Carrots-30 baby carrots
Milk-6 cups
Cashews-10
Almonds-10
Sugar-9 tbsp or to taste
Method:
1. Boil carrots in pressure cooker for 2-3 whistles.
2. Drain water and puree the carrots.
3. Boil or microwave almonds and cashews for 5-10 min and make a paste of them.
4. Boil milk in a large saucepan on a very small flame. Add sugar. Keep stirring frequently. Otherwise the milk gets burnt.
5. Add carrot puree, nut paste and mix well. Bring the mixture to a boil.
6. Adjust for sugar and turn off the stove once it reaches to smoothie like consistency.
7. Serve chill with silvered almonds.
Enjoy the delicious and healthy carrot smoothie.

Unsalted, unsweetened peanut butter- 1 tbsp
Milk-1/2 cup

1. Blend away all ingredients. Chill for few minutes in the freezer if you like.
2. For healthy version use peanut butter which is neither salted nor sweetened (I like the one from Teddie).
