Kidney bean pesto and ricotta wrap


Ingredients:


Servings:4

Favorite tortilla-4

For kidney bean mix:

Dry kidney beans-1 cup
Onion-1
Capsicum-1
Red chilly sauce-2 tbsp
Salt-to taste
Pepper-to taste
Lemon-1/4
Green onions-1/2 bunch

For Ricotta spread: 

Ricotta-4 tbsp
Salt-to taste
Pepper-to taste
Pesto-4 tbsp

Method:


1. Soak kidney beans overnight. Next day pressure cook with enough water and pinch of salt for 6-8 whistles. Cook on medium flame for the first two whistles and switch to small flame. Cook till soft.
2. Heat oil on a pan and add finely chopped onion and capsicum. Add salt and paper. Cook till soft.
3. Add drained kidney beans to the onion and pepper mix. Smash some beans.
4. Add chilly sauce and cook till the water evaporates. Turn of the stove and mix in lemon juice and copied green onions.
5. To make ricotta pesto spread, add all ingredients listed and mix well.
6. To assemble, heat a pan and cook tortilla till it gets brown on both sides.
7. Apply ricotta spread on one side of tortilla. Add kidney bean mixture, make a wrap and enjoy!!

Egg roll

Servings-2 rolls

Ingredients:


Eggs-2
Milk-2 tbsp
Green chillies-1
Salt-to taste
Onion-1/2 small
Tomato-1/4 small
Corriander-1 tbsp
Roti-2
Oil-1 tsp

Method:


1. Make roti and cook on one side. Leave the other side uncooked. Keep them aside.
2. Beat eggs in a bowl and add all the ingredients listed above. Mix well and keep it aside.
3. Heat 1/2 tsp oil in a non stick pan and pour half of the egg mixture. Place the roti on the top of egg mixture with cooked side facing down.
4. Cook until the mixture solidifies and cook the roti on the other side.
5. Repeat with the remaining mixture.
6. Sprinkle chopped onions, apply sweet and sour maggi sauce, roll it up and serve warm.

Paneer Kathi Roll

Ingredients:


Paneer-200 g
Capsicum-1 small
Onion-1/2 medium
Tomato-1/2 medium
Oil-1 tbsp
Lemon-1 tbsp
Corriander-to garnish

Marinade:

Thick Yogurt-1/2 cup 
Ginger garlic paste-1 tsp
Chilly powder-1 tsp
Turmeric powder-1/4 tsp
Besan-1/2 tsp
Chaat masala-1 tsp
Garam masala-1 tsp
Kasuri methi-1/2 tsp
Salt-to taste


For roll:

Roti-6
Corriander chutney-2 tsp per roti

Method:


1. Add curd to a bowl and mix all ingredients listed under 'Marinade' till smooth.
2. Cut paneer, capsicum, onion and tomato into 1/2 in pieces and add them to the marinade. Toss gently and let it sit for 30 min inside refrigerator. 
3. Heat a non-stick tava, grease it with oil and cook paneer, veggie mix. 
4. Cook for 5-7 min or until water disappears on a medium flame. Heat the mix on high flame for 30 sec-1 min if the mixture becomes very watery. Stir gently in between and make sure the marinade doesn't stick to the pan.
5. Turn off the stove, add lemon, mix and keep it aside.
6. Make a roti and apply coriander chutney on one side of it. Add paneer tikka masala, onions (optional) to the center of the roti, roll it up and enjoy!

Quinoa wrap with mango salsa

Ingredients:

 

Jalapeno Cheddar Tortilla-2
Quinoa-1/2 cup
Mushrooms-1/4 cup
Green zucchini-1 medium
Corn-1/4 cup
Carrots-1/4 cup
Ripe Mango-1/2 medium
Onion-1/2 medium
Salt-to taste
Green chillies-1
Lime juice-1 tbsp
Orange juice-1 tbsp
Oil-1 tsp
Corriander chutney-1 tsp

Method:

 

1. Wash Quinoa thoroughly. Add 2.5 cups of water, pinch of salt to quinoa and let it cook with a lid covered for 10 min or till it gets soft and fluffy.
2. Add 1 tsp of oil to a pan and saute vegetables of your choice. I added mushrooms, zucchini, corn and carrots. Cook till soft but crispy. Don't cook the veggies covered so as to retain the crispiness.
3. Now add cooked quinoa, salt to taste and cook for couple of minutes.
4. To make mango salsa, add cubed mango, finely chopped onions, salt to taste, finely chopped green chilly, lime and orange juice and mix properly.
5. Heat up your favorite tortilla on both sides till cooked and soft.
6. Spread corriander chutney on one side of the tortilla. Add quinoa mixture, mango salsa and wrap it up. If you don't know how to wrap it, below are simple and quick instructions.
