Ingredients:
Whole wheat flour: 1.25 cups
Almonds: 1/4 cup
Cashews: 1/4 cup
Edible gum (gond): 1/3 cup
Sugar (I used Sugar in the raw brand): 1/2 cup
Ghee (Made from kerrygold butter): 1 tbsp(for nuts), 4 tbsp (for gond), 3 tbsp (for flour)
Method:
1. Heat 1 tbsp of ghee. Roast almonds and cashews. Keep them aside.
2. Add 4 tbsp more ghee to the same pan and heat it. Add gond in batches. Once puffed, remove and keep it aside. The ghee has to be medium hot and not very hot. Otherwise gond will turn bitter. Check if ghee is hot by adding a small piece of gond. It has to rise and puff well.
3. In a separate pan, add 3 tbsp ghee and roast whole wheat flour on a low flame until it is golden brown and a nice aroma comes. Turn off the stove and let it cool a bit.
4. Now grind sugar into fine powder. Keep it aside.
5. Grind nuts and gond. Because of a good amount of ghee, nuts and gond became into paste than powder. I prefer this. If you like them crunchy, crush both instead of grinding.
6. Add nuts and gond paste, sugar powder to roasted wheat flour. Mix well.
7. There was enough ghee in the mixture to make into ladoos. Sugar amount was perfect too. Enjoy these healthy and delicious ladoos!
